Absolutely delicious!! I ordered my first ever tri tip roast from Rocky Mountain. I put this recipe together especially for Rocky Mountain Tri Tip.
    Tri-Tip Roast
Defrost. Open up one end of its bag & add:
    red wine about a cup
    fresh black pepper
a little sugar to cut the sourness of wine if its really ripe
Fold over cut bag end to ‘seal’ using a clip if needed & place roast & bag inside a square container. Marinate about 24 hrs, turning over a few times. Leave out room temp no longer than 1 hr.

5 cloves garlic minced or sieved
    2 tblsp olive oil
    2 tsp salt
2 tsp fresh ground black pepper
    2 tsp dried thyme
Mix together & let sit 15 mins.
Cut wedges of sweet potato, butternut squash, halved mushrooms & onions and place in large rectangle pan (I use a pyrex glass 9″ x 13″, 3 quart baker). Set inside hot oven to get them started.
Open oven door, place roast fatty side up on top of veges. Spoon oil mixture on top of roast. Add a little water to veges & sprinkle veges with olive oil.
Return to hot oven, turning temp up to 475/500 degrees for about 20mins. Lower temp to 300 & roast for about 40 mins to 1 hour.
Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.

It doesn’t get any better than this. I enjoy it with a dry rub or just salt and pepper and garlic powder in the oven at 250 for about an hour. Yum Yum
